Heart Healthy Recipe – Egg White Frittata
Breakfast can be both delicious and healthy! Make these incredible Egg White Frittatas and you’ll have your family (and your heart) saying, “Thank you!”
12 Egg Whites
1 Carrot, peeled
½ Cup Shredded Mozzarella
¼ cup Olive oil Salt & Pepper
Grate the carrot and zucchini. Slice the asparagus into ¼ inch pieces. In a bowl toss the vegetables with the olive oil, salt and peppers to taste. Spread out on a cooking tray and roast in a 375f oven for 15min or until cooked (we are trying to remove some of the moisture also). Remove from oven, let sit on bench for 10 min than cool in fridge.
Remove the egg whites from the yolks and whisk till even texture (smooth).
Spray the bottom and sides of a baking pan and spread the vegetables and 2/3 of cheese evenly and pour over egg whites. Sprinkle with remaining cheese and bake at 350f for 15min or until done. Let sit for 10min before cutting.
